Today's recipe is a delicious and refreshing kheer made with carrots.. The method is quite simple. You can serve this hot or chilled.. Serve this for this hot summer and get the goodness of carrots and milk along with honey
Carrots - 2 cups
Milk - 1 cup
Honey - 3 table spoons (adjust to taste)
Ghee - 1 table spoon
Chironji - a few for garnish
Saffron - a pinch
Cardamom Powder - 1/4 tea spoon (optional)
Grate the carrots
Heat ghee in a pan and sauté the chironji and set aside
In the same pan, sauté the carrots for a few minutes until the raw flavor of the goes away. Should take about 10 minutes
Add half the milk and allow it to cook on low flame until the carrots are well done
Add cardamom and remove from heat and blend it well.. Hand blender works best here
To 1 table spoon of warm milk, add the saffron.
To the carrots, add honey and more boiled and chilled milk, saffron milk and blend well
Transfer to the serving glass and garnish with the chironji and serve warm or chilled!!
